Our beef is all carefully prepared by expert hands, beginning with the all important dry age. What many of you may know as hanging, is absolutely essential to a good piece of beef. The common practice of maturing beef in a vacuum bag is nothing more than smoke and mirrors; wet meat does not mature well. Our beef, on the other hand, is hung on the bone in our purpose built chiller, giving you the flavour and texture that you deserve.
