All of our pork is of the finest Scotch pork, sourced from Ayrshire and processed here too. Not a major part of the Scottish food tradition, we make sure that all of our pork meets the mark for flavour, texture and sustainable farming practice. Well coloured with a meaty texture and flavour, our pork has a decent layer of creamy fat and rind that crackles as it should. And don't forget that when it comes to bacon, Ayrshire reigns supreme.
Poor old pork gets a really rough deal. When it comes to the mass produced intensively farmed offerings, modern pork may be the worst of the lot. Pale to the eye and pasty on the palate, it just is not what pork is all about. Well-muscled, deeply pink, and appropriately porky, decent pork should be all about the flavour; not the butcher's bottom line. You dont have to seek out the most expensive pedigree that you can find; just know what not to look for and agree on a fair price for it. You really can't say fairer than that.
