
Heat the oven to 200C.
Lay the cod, black pudding and tomatoes on a baking tray, with plenty of space between.
Drizzle the fish with the oil and season with salt and pepper.
Bake for around 10 minutes, until the fish is opaque and flakes apart when pressed.
Serve the fish over hot mushy peas, with the black pudding and tomatoes.
